Lara Foldvari joined the podcast today and brought a great perspective of being a "newbie" vegan, since she has been following a plant based lifestyle for less than a year.  Listen as she gives her tale of being "tricked" into going to a Plant Based Vegan Diet (funny story) and even her ideas for "sneaky vegan meals" to serve to people. She even provided us with the "word of the day" REJUVELAC which she describes how she uses this process.  

Here is her recipe for Vegan Mozarella she was kind enough to share:

1/3 Cup Raw Cashews (Soaked for about 4 hours in water)

1 Cup Water (filtered suggested)

3 heaping teaspoons potato starch (can use tapioca starch also)

1 tablespoon nutritional yeast

1 teaspoon apple cider vinegar

1 teaspoon salt

Blend all ingredients together in a blender.  Pour into a saucepan and stir, stir, stir over a medium heat.  It will start THICKEN and STRETCH -much like mozzarella does. You're done!  Store leftover in a container in the fridge.  She uses this on her vegan pizza's and vegan poutine (a french fries/gravy/cheese dish from Canada).
