Eddie Garza is the Senior Manager of Food and Nutrition for the Humane Society of the United States and he joins us today on the Plant-Based TourGuide podcast and you will INSTANTLY hear and feel his strong passion for what he does.
Eddie's journey to Plantbased - Vegan includes dropping 150 pounds when he changed his life and that number serves as a symbol in his new book with 150 recipes in his book to recognize those pounds dropped.
Eddie has implemented plantbased - vegan cooking programs all over the place and when I asked him how he was so successful in different types of areas at implementing, he told me that he always learned the demographic makeup in the areas and then create vegan dishes out of popular "traditional meat dishes" in those areas, essentially "meeting people where they are at" and this instantly prompted me to remark that he truly is the "Vegan Food Chameleon" for his unique ability to enter into these different areas, "morph" his meals to fit the area he's in and be successful.
