Here is her recipe for Vegan Mozarella she was kind enough to share:
1/3 Cup Raw Cashews (Soaked for about 4 hours in water)
1 Cup Water (filtered suggested)
3 heaping teaspoons potato starch (can use tapioca starch also)
1 tablespoon nutritional yeast
1 teaspoon apple cider vinegar
1 teaspoon salt
Blend all ingredients together in a blender. Pour into a saucepan and stir, stir, stir over a medium heat. It will start THICKEN and STRETCH -much like mozzarella does. You're done! Store leftover in a container in the fridge. She uses this on her vegan pizza's and vegan poutine (a french fries/gravy/cheese dish from Canada).
Hailee stopped by the Plant-Based TourGuide podcast today and shared a LOT of knowledge on how to juggle being a Full Time Mom (she has two (2) little girls, 4 1/2 and 1 1/2) AND she works in her business AND she balances time with her husband AND she maintains a Plant Based Diet for the entire family. WOW! She talks about great plant based meals for kids, great "go to" meals for when you're having company over for dinner and they aren't plant based eaters and you want to prepare them a great plant based meal that will appeal to their tastebuds. She gives great advice on "hiding stuff" in the smoothies for her kids to ensure they love the flavor and get their nutrients at the same time. Jenna and Jake (aka the corndog kid, explained in the show, lol) the rockstar husband and wife Health Duo stopped by the Plant-Based TourGuide Podcast today and spread a LOT of knowledge. Jenna gives great insight on Whole Foods and Free Radicals and everything we need to remember to get into our diet and the great news is that with a Plant Based Diet, we are getting many of these. She does remind us that with the depletion of many of the nutrients in our soil over the years of factory farming, we have to be mindful to find ways to ensure that we are getting all the nutrient levels that we need (you'll be amazed when she tells you how many servings of fruits and veggies we really need every day to reach optimal levels due to the lowered amount in today's fruits and veggies versus a generation ago) so she talks about ways to do this including an incredible product called JuicePlus.
